We believe that the true essence of high-quality olive oil lies in its origin. Where most brands buy and blend from multiple sources, our oil is made exclusively with olives grown on our organic farm in the Santa Ynez Valley.

Our farm is organic certified with regenerative practices, making for a vibrant climate, nutrient-rich soil and ultimately extremely happy and healthy trees and olives. When it comes to the quality of our oil, we can trace it back to every step of the farming process that made it possible.

Harvesting early
We always choose to harvest our olives early in the season to ensure we are making the highest quality olive oil. Picking olives when they’re still green (not purple or black) locks in the intense, fresh flavors and high polyphenol content, which contribute to a more vibrant, peppery taste and increased health benefits.

Harvesting early may require more care and give less yield, but it results in an olive oil that is rich in antioxidants and complexity.

The moment olives are picked, their flavor and freshness begin to deteriorate, so it's essential to press them as quickly as possible. By pressing our olives within an hour of harvest, we preserve their vibrant, fresh taste and ensure that every drop of oil is packed with nutrients and antioxidants.

With our mill just steps away from the orchard, we eliminate any delays or risk of spoilage that can happen when olives are left sitting in trucks or warehouses.
